Carrots

Carrots are an excellent source of B vitamins and vitamin C as well as calcium pectate— a soluble pectin fiber. In addition, no other vegetable or fruit contains as much carotene as carrots. Carrots are also a rich source of minerals like potassium, manganese, copper, folic acid, selenium, and magnesium. Furthermore, carrots contain high levels of antioxidants that provide protection against free radicals which may damage cells.
