White Rice

White rice is also known as brewers’ rice, rice flour, and ground rice. During the process of collecting and milling, whole white rice sometimes becomes broken. The non-broken kernels make up the rice you purchase at the store and the broken pieces are then used as brewers’ rice, rice flour, or ground rice. It is used as a source of highly digestible carbohydrates that produce quick energy. White rice has better starch conversion than corn and is added for its high digestibility and reduced fiber level. White rice is also less allergenic than other grain sources.
